Buying a bread loaf from the market is efficient and quick. But have you tried making a sandwich bread loaf at home? I have a nutritious and easy bread recipe for you that is simple to make and bake.

I love baking loaves of bread at home. Be it multi-grain bread, gluten-free bread or milk sandwich bread. Baking loaves of bread at home gives me a lot of happiness. If you bake a lot at home them I am sure you can relate to it too. When you see your family eating a fresh, preservative-free home-cooked meal, it gives a different level of satisfaction.

Recently, India celebrated its 73rd year of Independence. Foodism.xyz had organised an online contest ‘Taste the Tri-Colour’. Here home cooks and home bakers had to display our National Flag’s Tri-Colour in our food. The contest required us to incorporate all the colours of our National Flag: Saffron, White and Green.

I too wanted to showcase my love for the Tri-Colour and decided to do that through my Tri-Colour, Tri-Flavour Bread Loaf.

Colours of this Healthy Sandwich Bread

To make the different colours of the bread, I did not use any added food colours or gels. I got the natural colours through basic ingredients which can be found in our kitchen. The ingredients used to make Saffron, White and Green are as follows:

·        Saffron: A mixture of turmeric powder and Kashmiri Red Chilly Powder

·        White: Mixture of milk powder and plain milk

·        Green: A simple puree of fresh spinach

Easy right!? I am certain when you experiment your version of this Sandwich bread recipe, you too will find many more natural, nutritional and healthy ingredients and avoid using food colours.

This tri-colour, tri-flavour sandwich bread was not only different in colours but was also different in flavour too.

· The spiciness and the heat from turmeric and chilli powder

· Dense and a hint of bitter spinach puree

· The sweet milk bread acting as a palette cleanser between the two flavours.

How to make the colours of this healthy sandwich bread?

I made the saffron colour of this bread by adding equal quantities of turmeric powder (Haldi) and Kashmiri Red Chilli powder (Degi Mirch). I also added a pinch or two of regular chilli powder. Heat this mixture with some water.

We’ve all learnt this in school, mixing two primary colours; red and yellow, make orange! And, mixing turmeric and red chilli powder I got saffron colour for the top half of my bread loaf. I used the Kashmiri red chilli because these chillies aren’t that hot and spicy but they leave a deep red colour.

For the Green colour, I used fresh spinach leaves. Using enough water, grind the spinach leaves. Use this puree instead of water to knead the bread dough.

Shaping the Tri-Colour Bread

Since it was my first time making this healthy bread recipe, I decided to stick to a simple loaf size for the bread. I prepared the three different coloured doughs and stacked them in the loaf tin.

1.    Green dough first

2.   White Dough on top on Green

3.   Saffron dough at the topmost

Tri-Coloured Bread Loaf

You can shape the bread in whatever shape you desire. All you have to do is make three different coloured doughs and then you can:

·        Make a braid style bread with three different colours

·        Shape one coloured dough into a log and place it inside the other. Just like a set of Russian Doll also known as Matryoshka doll set.

·        Roll out the three different coloured doughs in equal size. Stack them together and roll the entire bread into a loaf. Once you cut into a baked sandwich bread made in this style, you’ll see the colours in a spiral design.

·        You can also roll the different coloured doughs in a log and place them next to each other in a greased baking loaf tin. All three doughs will be at the base of the tin, next to each other.

·        You can make tri-coloured buns also from the same recipe. Just as you stuff buns with a filling of your choice, use a similar process for tri-coloured buns. Make a small ball of the green coloured dough and place it on a rolled out, slightly bigger white dough. Roll this into a bun shape and place this in a rolled out even bigger saffron dough. Shape the entire dough in a bun.

Ingredients
  

Ingredients for White Bread

  • 100 grams All-purpose flour
  • 1 gram Salt
  • 1/2 teaspoon Milk powder
  • 4 grams Fresh Yeast (You can use 2 grams of powder yeast)
  • 1 teaspoon Sugar
  • 1 tbsp lukewarm water (For activating yeast)
  • 65 ml milk (at room temperature)
  • 1 teaspoon Refined Oil

Ingredients for Saffron Bread

  • 100 grams All-Purpose Flour
  • 1 gram salt
  • 1/2 teaspoon dried milk powder
  • 4 grams Fresh Yeast (You can use 2 grams of powder yeast)
  • 1 teaspoon sugar
  • 1 teaspoon Turmeric Powder (Haldi)
  • 1 teaspoon Kashmiri Red chilly (Degi Mirch)
  • 1 tablespoon Lukewarm Water For activating yeast
  • 65 ml water to knead the dough
  • 1 teaspoon Refined Oil

Ingredient for Green Bread

  • 100 grams All-Purpose Flour
  • 1 gram Salt
  • 1/2 teaspoon Dried milk powder
  • 4 grams Fresh Yeast (You can use 2 grams of powder yeast)
  • 1 teaspoon sugar
  • 1.75 cups Fresh Spinach leaves (will make about 65-70 ml of Spinach Puree/ paste)
  • 1 tbsp Lukewarm Water (to activate the yeast)
  • 1 tsp refined oil

Instructions
 

Method for White Bread

  • In 1 tablespoon lukewarm water, add yeast and sugar. Keep it aside to activate the yeast.
  • In another bowl, sieve flour, salt and milk powder and mix it.
  • Add yeast mixture in the bowl of dry ingredients and then add 65 ml water.
  • Knead a soft dough of this. Add the oil and knead again.
  • Keep the White dough in a greased bowl. Cover it and let it prove for about 15-20 minutes or till it’s slightly risen.

Method for Saffron Bread

  • In 1 tbsp lukewarm water, add yeast and sugar. Keep it aside to activate yeast.
  • In a saucepan, heat 65 ml along with turmeric and Degi Mirchi. The water will become saffron coloured.
  • In another bowl, sieve flour, salt and milk powder and mix it.
  • Add yeast mixture in the bowl of dry ingredients and then add the saffron-colored water.
  • Knead a soft dough of this. Add the oil and knead again.
  • Keep the saffron dough in a greased bowl. Cover it and let it prove for about 15-20 minutes or till it’s slightly risen.

Method for Green Bread

  • In 1 tbsp lukewarm water, add yeast and sugar. Keep it aside to activate yeast.
  • Make the spinach puree by taking 3.75cups of spinach leaves and just enough waterto grind it into a smooth paste.
  • In another bowl, sieve flour, salt and milk powder and mix it.
  • Add yeast mixture in the bowl of dry ingredients and then add spinach puree.
  • Knead a soft dough of this. Add the oil and knead again.
  • Keep the Spinach dough in a greased bowl. Cover it and let it prove for about 15-20 minutes or till it’s slightly risen.

Assembling the Tri-Coloured Breads

  • After all three doughs are proved, do a knock back to de-gas the dough.
  • Shapeeach dough in a log or rectangle.
  • Place Spinach dough first. Add the rectangle of white dough on top of spinach dough. Lastly, add the rectangle of Saffron dough on top of white dough.
  • In a greased loaf tin. Add the layered dough and let it prove till risen or doubled in size.
  • Bakethe Tri-Colored Spinach and Spice Sandwich bread in a pre-heated oven at 200 degree for 25-30 minutes.
  • De-mould the bread as soon as its baked and cool completely.

Notes

  • Make the spinach puree by adding just a little bit of water to make it into a paste.
  • Be careful when using red chilli powder. The recipe mentioned Kashmiri Chilli powder which is good for its colour. To add more spiciness in the dough, please add 1 teaspoon of regular chilli powder.
